At Food For Thought we are as excited for the arrival of summer as you are, like most people in Bozeman, we thought it might not actually come this year! In celebration of the long awaited arrival of warm sunny days and evenings, we will be sharing some of our favorite recipes with our customers. Our recipes will be sure to compliment the last minute back yard BBQ, be the centerpiece of a light healthy lunch, or become your family’s new favorite dinner. Our kitchen understands how much our customers enjoy our fresh made deli salads and menu items, therefore we thought it was time to share our favorites with you!
Lemon Basil Cous Cous Salad
2 TB Extra Virgin Olive Oil
2 Shallots minced
1 Garlic clove minced
1 ½ Cup Chicken, Vegetable Broth or Water
1 Cup Cous Cous
1 Tsp Grated Lemon Zest
Juice of 1 lemon
¼ Cup fresh basil finely chopped
¼ Cup toasted pine nuts
¼ C Cup finely chopped artichoke hearts (optional)
¼ Cup Diced Tomatoes
¼ Cup Crumbled Feta, Goat, or Parmesan cheese (optional)
Salt and Pepper to taste
Heat oil in medium pan over medium-high heat. Add shallots, cook 2 minutes or until softened. Stir in garlic until fragrant. Add broth and lemon zest, bring to a boil.
Stir in cous cous, remove pot from heat and cover for 5 minutes. Fold in remaining ingredients, fluff, and adjust seasoning as needed.
